Chicken Pot Pie with Cypriot New Potatoes

Readers, as part of the Foodies 100 network, this week I’ve been taking part in a cooking challenge with Tesco Cypriot New Potatoes, which are currently in Tesco stores nationwide.  You’ll find them loose and in 750g bags. They are the "spunta" variety if you are searching in store.  Our local Extra store only had the loose variety, so here's a shot of the packaging, if you are on the hunt for pre-packed. 

For this challenge, bloggers across the UK have been asked to create recipes showcasing creative ways to use potatoes.  For my recipe, I’ve made a comforting, warming pot pie, with a crust top rather than pastry, for those of you looking for a lower fat option.

This dish comfortably serves 4 people and if you are buying your new potatoes loose – make sure to scrub them well before cooking.  I kept the skin on for my dish as it’s full of fibre and good vitamins.

Ingredients – serves 4

500g Cypriot New Potatoes – par boiled and sliced
2 chicken breasts
3 shallots (sliced)
1 garlic clove (chopped)
100ml white wine
3 cups frozen vegetables
800ml gravy
Topping
2 slices white bread
1 teaspoon minced garlic
1 teaspoon mixed herbs
2 teaspoons paprika
1 dessert spoon grated Italian hard cheese

Method

  1. Preheat the oven to 180c (fan)
  2. Par boil your potatoes for around 15-20 mins until almost cooked through. Cool slightly, then slice.
  3. Fry the shallots, garlic and chicken in a pan. Add the white wine and allow to cook down for 10 minutes.
  4. In the meantime, add the topping ingredients to a food processor and whizz together until breadcrumbs are formed.
  5. Add the frozen vegetables and half of the gravy to the chicken.  Cook for 5 minutes on the hob.

  6. Take an oven proof dish and add a layer of sliced potatoes in the bottom and a little gravy. Then add the chicken and vegetables mix as the next layer.  Top with another layer of sliced potatoes and then a layer of gravy on top.

  7. Lastly, add an even layer of the topping mix.   
  8. Transfer to the oven and bake for 20-25 minutes until potato and chicken is cooked through. 
    Finished dish, ready to serve 


Serve immediately.
